8-channel EGT?

Ok, so it could be done with 2 boards, but is there any reason the gp analog inputs couldn't be repurposed to function as another 4 egt channels (assuming the user builds input stages for the probes)?

Yes, you can re-purpose the other analog (ADC) inputs to bring the signal from a thermocouple through an AD595 to the processor. It will likely require a bit of proto board or something pre-made to accommodate the chip , etc..
